The arrival of spring is much more than a change of season; it’s a true invitation to renew. As the days grow longer and the sun begins to warm the streets, our culinary cravings evolve. We move away from the rich, heavy flavours of winter and start seeking freshness and vitality.
This month at El Epicúreo, we wanted to explore a new side of indulgence—one that feels just as good for the body as it does for the mind. Our challenge? To create a dessert that melts in your mouth, without a single grain of added sugar or a gram of flour.

The Philosophy of “Eating Better” Without Frustration
Many people think that baking without sugar or flour means sacrificing flavour. Think again! In April, nature already provides everything we need.
The secret behind our “Apple Banana Soft Cake” lies in the smart use of ingredients:
- Oats for lasting energy: Unlike white flour, oats provide fibre and long-lasting fullness to keep you energised throughout your springtime walks.
- Banana as a natural sweetener: As it ripens, starch turns into sugar, creating a naturally sweet flavour and a beautifully soft texture.

¡Buen provecho!
Your Baker’s Tips for a Healthy Spring
Playing with textures and contrasts
A great dessert engages the senses. If the cake itself is soft and delicate, we recommend adding a crunchy element. Sprinkle toasted hazelnuts or pumpkin seeds on top before baking. The contrast between the soft fruit and crunchy nuts is irresistible.
The perfect pairing
In April, the first strawberries start appearing at market stalls. Serve a slice of this cake with a fresh strawberry coulis (blended with no added sugar) or a few slices of tart apple to balance the sweetness of the banana.
The spice trick
If you’re reducing sugar in your diet, your palate may need a little help. Cinnamon or a vanilla pod are your best allies. They create the illusion of sweetness while filling your kitchen with an irresistible aroma.

Why do kids love it?
We tested this recipe with our “little tasters” at the bakery—and the verdict is clear: they love its cloud-like texture and fruity flavour. It’s the perfect healthy school snack, without the sugar spikes that come with processed treats.

Frequently Asked Questions (FAQ)
If you prefer to avoid oats, you can use almond or hazelnut flour for an even softer texture. Keep in mind that oats provide a unique structure that helps the cake hold together without traditional flour.
The secret to softness and lightness lies in precise baking. Insert a knife into the centre—it should come out clean but slightly moist. Avoid overbaking, as the fruit’s natural moisture creates that melt-in-the-mouth texture.
Thanks to its high fruit content, this cake stays soft for 2–3 days. Store it in an airtight container in the fridge to preserve its springtime freshness.
